Description: Crafted in the district of Tlacolula, Santiago Matatlán, Oaxaca, this extraordinary gin takes inspiration from the rich tradition of mezcal production. Distilled from the spent agave fiber (bagasse) leftover from mezcal-making, it breathes new life into this sacred plant. Guided by the skilled hands of Maestro Destilador Gonzalo Martinez, this gin showcases the harmonious fusion of local botanicals and ancestral distillation techniques.

The journey begins with the meticulous hand milling of the spent agave fiber, using a large wooden mallet and a traditional long wooden canoe. This remilled bagasse is then incrementally combined with pure spring water and left to ferment naturally, solely relying on the wild yeast that thrives in the local environment. Through a single distillation in a clay still—an homage to ancient traditions—the spirit takes form, ready to embark on its transformation.

In the second distillation, the spirit encounters the vibrant essence of 15 meticulously selected botanicals. Among these, juniper reigns supreme, joined by the delightful presence of hoja santa, basil, cinnamon, guava, orange peel, lime peel, eucalyptus, lemongrass, and mint. Notably, every botanical, including the juniper, is sourced exclusively within the Tlacolula region, capturing the true essence of the land.
